Smoked Pulled Pork Butt
- 6 lb boston butt pork roast
- 1 cup light brown sugar
- 4 tbsp Lawry's seasoned salt
- 2 tbsp granulated garlic
- 1 tbsp cayenne pepper
- 2 tbsp mustard powder
- 1 tbsp chipotle powder
- 3 handfuls Apple Wood Chips
- Mix all ingredients together except wood chips
- Rub pork butt with the dry ingredients and marinate for at least 3 hours
- Meanwhile soak the wood chips for at least 30 minutes
- Drain wood chips and reserve the water then place chips in a foil loaf pan, placing the pan in between the coals and meat
- Place pork butt on grill over indirect heat when coals ash over and temp is 250-300F
- Slow cook for 6 hours and keep checking and turn butt over every 2 hours also throw some chips on the fire for better smoke flavor
