Fluffy Cranberry Orange Pie
- 1 pkg (85 g) Jell-O Cranberry Jelly Powder
- 1 cup boiling water
- 2 cups ice cubes
- 3 cups (from 1 L tub) Cool Whip Whipped Topping, thawed
- 3/4 cup whole cranberry sauce
- 1 tsp. grated orange rind Safeway 1 lb For $0.79 thru 02/09
- 1 prepared 9 inch (23 cm) graham wafer crumb crust
- sugared cranberries (optional)
- orange slices, cut into small wedges King Sooper's 1 lb For $0.99 thru 02/09
- DISSOLVE jelly powder in boiling water, stirring until completely dissolved, about 2 minutes.
- Add ice cubes.
- Stir until jelly thickens (3 to 5 minutes).
- Remove any unmelted ice.
- FOLD jelly into 2 1/2 cups (625 mL) whipped topping; blend until smooth.
- Fold in cranberry sauce and orange rind.
- REFRIGERATE 20 minutes or until mixture is slightly thickened.
- SPOON into crumb crust.
- Refrigerate 3 hours.
- GARNISH with remaining whipped topping, sugared cranberries and orange slices.
