Goat Cheese and Blackberry Tart

  1. Preheat oven to 350F.
  2. Spread blackberries over bottom of crust.
  3. Place cheese, milk, sugar, eggs, lemon zest and vanilla in blender or food processor.
  4. Blend until smooth.
  5. Pour cheese mixture over blackberries.
  6. Bake 45 to 50 minutes, or until filling has set and tip of knife inserted in center comes out clean.
  7. Cool on wire rack.
  8. Place blackberry jam and 1 tsp.
  9. water in microwave-safe bowl.
  10. Microwave on high 30 seconds, or until jam turns liquid.
  11. Stir until smooth.
  12. Brush mixture over top of tart.
  13. Slice into 8 wedges, and serve once jam has set.
