AMIEs PUMPKIN, BEANs & SHRIMPs in COCONUT MILK (GINATAANG KALABASA)
- 1 1/2 lb shrimps
- 1/2 butternut pumpkin/squash
- 1 medium onion, sliced
- 3 clove garlic, minced
- 2 cup long beans, cut into 3 inch lenghts
- 400 ml coconut milk
- 2 tbsp fish sauce
- 2 pieces chili pepper
- Heat oil in a large pan over medium heat.
- Saute onions and garlic until becomes tender.
- Add squash and long beans.
- Cover and cook for 5 minutes Add coconut milk, chili pepper and fish sauce.
- Cook in a low heat, cover and let it boil for a few minutes.
- Add shrimps.
- Simmer for 15 minutes until the vegetables are cooked.
- Season with salt and pepper.
- Serve hot with steamed rice.
- Serve, share and enjoy!
