Chicken N Stuffing Scallop Recipe
- 1 (8 ounce.) pkg. herb stuffing
- 3 c. cubed cooked chicken
- 1/2 c. butter
- 1/2 c. flour
- Salt and pepper
- 4 c. chicken broth
- 6 slightly beaten Large eggs
- 1 recipe Pimento Mushroom Sauce
- Prepare stuffing according to package directions.
- Spread in 13 x 9 inch baking dish; top with layer of chicken.
- In large pan heat butter; blend in flour and seasonings.
- Add in cold broth; cook and stir till mix thickens.
- Stir small amount warm mix into Large eggs, return to warm mix; pour over chicken.
- Bake at 325 degrees for 40 to 45 min.
- Let stand 5 min to set; cut in squares and serve with Pimento Mushroom Sauce.
- 12 servings.
