Authentic and Substantial Pork Don
- 400 grams Thinly sliced pork belly
- 2 Onion
- 1/3 Burdock root
- 800 ml Bonito soup stock (thin)
- 100 ml Soy sauce
- 100 ml Mirin
- 3 tbsp Sugar
- Cut the burdock root into long thin shavings (easy if you use a vegetable peeler).
- Cut the pork belly and onions into bite-sized pieces.
- Put bonito soup stock, soy sauce, mirin, and sugar in a pot.
- Boil.
- Add pork belly and burdock root and boil.
- Skim off the scum.
- Simmer for 10 minutes.
- Add onions and simmer for another 10 minutes.
- Done.
- Add mitsuba, pickled red ginger or soft poached egg if you want.
