Addictive Indian Coconut and Milk Delights
- 12 cup crumbled powdered milk or 12 cup instant powdered milk (known as "khoya" in Hindi thickly mixed with very little water it should be very thick)
- 1 tablespoon powdered sugar
- 34 cup desiccated coconut
- 2 tablespoons pure ghee
- 12 cup semolina
- 1 12 liters milk
- 1 cup sugar
- 14 teaspoon fresh green cardamom powder
- 12 teaspoon food coloring, of your choice (I use green and yellow)
- 4 tablespoons finely chopped almonds or 4 tablespoons pistachios or 4 tablespoons cashews (or combination)
- Roll the thick khoya into small balls.
- Stuff finely chopped almonds, cashews and pistachios into the balls alongwith a little cardamom powder.
- In 2 separate pans, roast the semolina and coconut on low-medium flame.
- Grind the semolina into a powder.
- Keep the coconut aside as it is{roasted}.
- Heat the milk in a large pot.
- Add sugar, semolina, ghee and the desiccated coconut.
- Divide this mixture into 2 parts.
- Mix 1/2 tsp.
- of any two different food colours in these parts separately.
- Make balls out of this mixture.
- Stuff the khoya balls in these.
- Add the rest of the sugar and cardamom powder to the milk.
- Boil for a few minutes.
- Add these balls to the milk.
- Boil for 2 more minutes.
- Remove from heat.
- Transfer to a serving bowl.
- Serve immediately{hot} or cold.
- Enjoy!
