Pecan Coated Chicken Nuggets
- 2 large eggs
- 2 tablespoons water
- 1 cup pecan meal
- 12 teaspoon salt
- 12 teaspoon pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 12 tablespoon dried parsley
- 3 chicken breasts
- 3 tablespoons safflower oil or 3 tablespoons sunflower oil
- Beat eggs and water in a small bowl.
- Mix pecan meal & spices in a medium bowl.
- Chop chicken breast into bite size pieces.
- Dip chicken pieces in egg mixture, then pecan meal mixture.
- Fry in skillet until no longer pink.
