Cannellini Florentine
- 4 slices of thick bacon, chopped
- 3 garlic cloves, minced
- 1 onion, chopped
- 1 can chopped spinach (can use frozen)
- 1 (14 ounce) can cannellini beans
- 1 (16 ounce) canlight red kidney beans
- 1 (16 ounce) can dark red kidney beans
- 3 (14 1/2 ounce) cans chicken broth
- 12 cup sun-dried tomato, cut into strips
- 1 teaspoon dried basil
- crushed red pepper flakes
- shredded parmesan cheese
- crispy French fried onion rings
- Cook bacon in large stock pot until done.
- Add garlic and onion.
- Saute until brown.
- Mix in spinach.
- Saute 2minutes.
- Add remaining ingredients and simmer 10 minutes.
- Add salt and pepper to taste.
- Top with cheese and crispy onions.
