Smith River Rotini Recipe
- 1/2 pound rainbow Rotini, cooked
- 1/4 c. black olives, sliced
- 6 ounce. marinated artichoke hearts, quartered
- Can green beans
- 4 ounce. pepperoni sliced and quartered
- 1 white onion, diced
- 1 green pepper, diced
- 1 red pepper, diced
- Mix all ingredients.
- Pour Smith River dressing over and toss.
- Marinate 8 hrs before serving.
