Easy Quinoa Beef Meatball Subs

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine quinoa, beef, eggs, salt, and pepper.
  3. Form into 9 one-inch meatballs.
  4. Preheat a skillet to medium heat and add olive oil.
  5. Place meatballs into the skillet and cook on the first side for about 4 minutes; flip, add the marinara, and continue to cook for additional 4 minutes.
  6. Spray a baking sheet with nonstick cooking spray and place sub rolls on top.
  7. Take 3 meatballs and place them into a roll.
  8. Top meatballs with mozzarella and bake in the oven for at least 5 minutes or until the cheese is golden.
  9. Garnish with basil and Parmesan.
