Shrimp Fried in Coconut Milk
- 6 Shrimp
- 1 bunch Garlic shoots
- 1/2 Red onion (or normal onion)
- 1 Katakuriko
- 1 Salt and pepper
- 1 Vegetable oil
- 4 tbsp Coconut milk
- 1 tbsp Tomato puree
- 1 tbsp Fish sauce
- Prepare the ingredients.
- Mix the coconut milk, tomato puree, and fish sauce together in a bowl.
- Slice the garlic shoots into easy to eat lengths.
- Roughly chop the onion.
- Peel and devein the shrimp.
- Make deep cuts into the back and open them up.
- Use a knife to gently make the cuts, right through to the tail.
- Season with salt and pepper, and lightly dust with katakuriko.
- Coat a frying pan in vegetable oil, and fry the onion.
- When tender, add the garlic shoots and shrimp.
- When the surface of the shrimp has browned and they are cooked through, add the combined flavouring ingredients.
- It's done when the sauce is fully mixed in.
- Enjoy with lemon and cilantro.
