Brown Cookies Recipe

  1. Combine molasses, honey, lard and sugar in a heavy sauce pan.
  2. Place over medium heat and cook, stirring occasionally, till mix begins to foam and bubble.
  3. Remove from heat and let cold 15 min.
  4. In a large bowl combine flour, salt, baking soda, and baking pwdr.
  5. Add in whole Large eggs to molasses mix; pour at once into flour mix.
  6. Stir till a soft dough forms.
  7. Divide dough in half.
  8. Wrap each half separately in plastic wrap.
  9. Chill at least 2 hrs (preferably over night).
  10. Preheat the oven tp 400 degrees F.
  11. Roll out half piece of dough at a time on a heavily floured board to thickness of about 1/8 inch.
  12. Cut into rectangles about 2x3 inches in size.
  13. Place on a greased baking sheet.
  14. Beat egg yolk with 2t water.
  15. Brush cookies with egg mix.
  16. Decorate the tops of cookies with almonds and candied lemon peel.
  17. Bake for 6 to 8 min, watching closely because these bake very quickly and will burn before you know it.
