Green Chili
- 1 lb boneless pork sirloin, cut into cubes
- 1 onion, diced
- 1 garlic clove, minced
- 2 cups diced hatch green chilies (can be bought canned)
- 24 ounces diced tomatoes and green chilies
- 1 tablespoon vegetable oil
- 12 teaspoon salt
- 14 teaspoon pepper
- 2 tablespoons flour
- 4 -6 cups chicken stock
- brown pork in oil.
- add onions until soft then add garlic and saute for 1-2 min.
- sprinkle flour and cook 1-2 mins stirring constantly.
- add chilies, canned tomatoes, chicken stock, salt and pepper.
- bring to boil, reduce heat and simmer 1 1/2 to 2 hr stirring occasionally until pork is tender.
- Chili can be thickened if needed by adding a mixture of cornstarch and water.
