Best Ever Chicken Cacciatore

  1. HEAT oil in a large non-stick frypan and cook the chicken for 5-6 minutes until browned.
  2. Remove and set aside.
  3. REDUCE the heat, add the onion and saute until softened.
  4. Add the garlic and cook gently for a further minute.
  5. Add the wine, tomatoes and tomato paste and bring to the boil.
  6. Return the chicken to the pan, season with black pepper and cover.
  7. Simmer for 20-30 minutes or until tender.
  8. STIR through the olives, oregano, PHILLY and sugar and stir to combine.
  9. Bring to the boil and cook for a further minute.
  10. Serve with steamed rice and salad.
