Favorite Stroganoff
- 1 medium onion, diced
- 1 tablespoon olive oil
- 1 lb sirloin steak
- 12 lb sliced mushrooms
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 teaspoon paprika
- 12 teaspoon dry mustard
- 2 tablespoons dry sherry or 2 tablespoons cognac
- salt and pepper
- 12 cup light sour cream
- Slice the sirloin into 1/4 inch by 2 inch slices, set aside.
- Saute onion and mushrooms in olive oil until softened.
- Add the sirloin, cover and simmer on medium low for 30 minutes.
- Drain 1/2 of the juice from the pan.
- Add the sherry, cream of mushroom soup, paprika, dry mustard, salt and pepper.
- Cover and simmer on low for 10 minutes.
- Add the sour cream to the mixture and heat through.
- Serve over egg noodles or rice.
