Vegetable Lasagna Pizza
- 1 cup Tomato Sauce
- 1 teaspoon Basil
- 1 teaspoon Oregano
- 1/4 teaspoons Thyme
- 18 teaspoons Pepper
- 18 teaspoons Salt
- 1 clove Garlic
- 2 Medium Zucchini
- Olive Oil
- 1 whole Pizza Dough
- 1 cup Ricotta Chese
- 1/2 cups Shredded Mozzarella Cheese
- 1/2 cups Parmesan Cheese
- Preheat the oven to 450 degrees F.
- In a small bowl combine the tomato sauce and spices, including the salt.
- Mince the garlic and place in a small bowl.
- Microwave the garlic for a minute or so, until fragrant and somewhat soft.
- Add to the sauce.
- Cut the zucchini into rounds about 1/4-inch wide.
- Toss them in salt, pepper, and olive oil.
- Grill or saute them until tender but not limp.
- Roll out the pizza dough and place it on a baking stone or pan.
- Bake the pizza crust for 5-8 minutes, until nearly done.
- Remove the crust from the oven.
- First, spread the ricotta cheese on the crust.
- Then, add the sauce and sprinkle it with the mozzarella.
- Place the grilled zucchini rounds on next and sprinkle them with the parmesan cheese.
- Bake for 10 minutes, until the parmesan cheese has melted slightly and the crust is done.
