Red Cabbage, Avocado, and Pea Salad
- 1/2 heads Red Cabbage, Thinly Sliced
- 1 cup Frozen Petite Peas, Thawed
- 1/4 cups Red Onion, Finely Chopped
- 1 whole Avocado, Pitted & Cut Into Chunks
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Granulated Garlic Powder
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 1 Tablespoon Cider Vinegar
- Combine first four ingredients (cabbage, peas, onions, avocado) in a large mixing bowl.
- Drizzle olive oil over cabbage and gently toss to coat.
- Sprinkle granulated garlic, salt and pepper over cabbage; gently toss.
- Add vinegar and gently mix well.
- Taste before serving and adjust seasoning if needed.
