Strawberry Lemonade Muffins

  1. Heat oven to 400 degrees.
  2. Lightly spray jumbo muffin tin with cooking spray.
  3. Mix together all wet ingredients with sugar and lemon peel.
  4. Combine all dry ingredients and then mix with wet only until moistened.
  5. Add the food coloring now if you want a more"lemon" look to the muffin.
  6. Scoop a portion of the batter in the bottoms of the muffin tin.
  7. Add 2 tsp of jam on top of the batter, spreading slightly.
  8. Cover jam with remaining batter.
  9. Bake 18-23 minutes.
