Caramelized Onion, Mushroom and Garlic Oil Flatbread
- 2 tablespoons olive oil for cooking the onions
- 2 large red onion peeled, halved and thinly sliced
- 1/2 teaspoon thyme optional
- 1 tablespoon balsamic vinegar
- 8 ounces pizza dough whole wheat, store-bought or homemade, enough for 2 people, or as needed
- 3 tablespoons olive oil cooked with freshly minced garlic for about 5 minutes
- 2 tablespoons parmesan, parmigiano-reggiano cheese, grated
- 1/4 each sweet red bell peppers sliced
- 1/4 cup pineapple fresh or canned, drained, small cubes
- 2 each mushrooms sliced, button or cremini
- 2 clove garlic sliced
- Put the pizza stone in the oven if you have one, and preheat the oven to 450F (230C).
- Heat the olive oil in a large nonstick skillet on medium heat until hot.
- Add the onions and thyme, stirring occasionally, and cook until the onions are very soft and caramelized, about 15 minute.
- Stir in the balsamic vinegar close to the end of the cooking to pick up any brown spots at the bottom of the pan.
- Divide the pizza dough into two equal portions, shape each portion into about 9 by 6-inch rectangular.
- Brush each pizza with garlic-olive oil and sprinkle parmesan cheese evenly over the oil.
- Spread equal amount of caramelized onions over each dough.
- Top each with sweet bell pepper strips, pineaple cubes, mushrooms and garlic slices randomly.
- Bake until the shell is golden brown and the cheese starts to become brown, 12 to 15 minutes.
- Cool slightly and serve warm.
