Caramelized Onion, Mushroom and Garlic Oil Flatbread

  1. Put the pizza stone in the oven if you have one, and preheat the oven to 450F (230C).
  2. Heat the olive oil in a large nonstick skillet on medium heat until hot.
  3. Add the onions and thyme, stirring occasionally, and cook until the onions are very soft and caramelized, about 15 minute.
  4. Stir in the balsamic vinegar close to the end of the cooking to pick up any brown spots at the bottom of the pan.
  5. Divide the pizza dough into two equal portions, shape each portion into about 9 by 6-inch rectangular.
  6. Brush each pizza with garlic-olive oil and sprinkle parmesan cheese evenly over the oil.
  7. Spread equal amount of caramelized onions over each dough.
  8. Top each with sweet bell pepper strips, pineaple cubes, mushrooms and garlic slices randomly.
  9. Bake until the shell is golden brown and the cheese starts to become brown, 12 to 15 minutes.
  10. Cool slightly and serve warm.
