Mexican Ground Beef & Potato Bake

• 2 lb. potatoes, cut into 1-inch chunks Safeway 2 pkg For $5.00 thru 02/09
• 1 lb. ground beef
• 1 cup BREAKSTONE'S or KNUDSEN Sour Cream
• 1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
• 1 pkg. (1 oz.) TACO BELL Taco Seasoning Mix
• 1 red pepper, sliced

1. Place potatoes in 13x9-inch microwaveable baking dish sprayed with cooking spray; cover.
2. Microwave on HIGH 10 min.
3. Meanwhile, brown meat in large skillet; drain.
4. Stir meat, sour cream, cheese and seasoning mix into potatoes; top with peppers.
5. Bake 30 min.
6. or until potatoes are tender.
