Diabetic Pumpkin Bars
- 1/2 c. margarine, softened
- 1/4 c. granulated fructose
- 1 egg
- 2 tsp. vanilla
- 1 tsp. each cinnamon, ginger, allspice and baking soda
- 1/2 c. apple juice concentrate
- 1/2 c. mashed banana (1 medium)
- 1/2 c. canned pumpkin
- 1 1/2 c. all-purpose flour
- 1/2 c. raisins
- 1/2 c. chopped pecans
- Preheat oven to 325u0b0.
- With electric mixer, combine margarine, apple juice concentrate, fructose and mashed banana. Beat in egg. Stir dry ingredients into pumpkin mixture. Add raisins and nuts. Spread into a 9 x 13-inch pan which has been sprayed with nonstick vegetable coating.
- Bake at 325u0b0 for 25 minutes or until firm in center.
- Yields 20 servings. Each serving contains 142 calories (44% from fat).
