Broccoli & Cheddar Soup
- 1/4 cup butter
- 1/4 cup All purpose flour
- 3 cup Chicken broth
- 3 cup Milk
- 1/2 tsp White pepper
- 2 cup Broccoli florets, blanched
- 3 cup Sharp cheddar, grated
- In a large pot or Dutch oven, heat butter, at the flour and reduce the heat
- cook for 2 minutes
- add the broth, milk,and pepper
- Bring to a boil
- Reduce heat and simmer for 10 minutes
- Stir in the broccoli and cheese
- Continue to simmer for an additional 5 minutes
- Serve soup at once
