Mae's Orange Sesame Chicken with Veggie Stir Fry
- 4 boneless skinless chicken breasts, cut into bite size pieces
- 1/4 cup soy or terriaky sauce
- 2 tbsp white wine vinegar
- 2 tbsp sesame oil
- 1 tsp ginger
- 1/2 tsp black pepper
- 1 tbsp garlic powder
- 2 clove garlic peeled and minced
- 1/3 cup corn starch
- 1 cup orange juice
- 1 cup orange marmalade
- 1 oz jar sesame seed
- 1 medium crown broccoli
- 1 red bell pepper
- 1 green bell pepper
- 1 medium onion
- 4 large white mushrooms
- 1 cup baby carrots
- 2 tbsp olive oil
- cut veggies into bite size pieces
- saute chicken with a little oil until no longer pink inside
- add soy sauce, vinegar, orange juice, sesame oil, and seasonings
- add marmalade to chicke, stir and let simmer for 15 minutes
- while simmering, in separate bowl add corn starch and 1/2 cup water, stir until smooth
- stir in corn starch liquid to chicken, let simmer until thick
- stir in sesame seed
- saute veggies in olive oil until tender
- stir into chicken mixture
- serve with noodles or on its own
- enjoy
