Minestrone Sausage Soup Recipe
- 1 pound Italian sausage (bulk)
- 1 tbsp. extra virgin olive oil
- 1 lg. onion
- 10 c. water
- 1/4 c. parsley
- 1/4 teaspoon pepper
- 2 teaspoon salt
- 2 lg. potatoes, diced
- 2 lg. carrots, minced
- 1 bunch spinach
- 1 sm. can tomato sauce
- Sweet basil
- 1/2 c. elbow macaroni
- Brown sausage in oil.
- After browning sausage, put all ingredients in crock pot and cook about 6 hrs on low.
- Add in 1/2 c. elbow macaroni.
- Cook till macaroni is tender.
- Serve with grated Parmesan cheese.
