Apple Raisin Cake
- 2 cups firmly packed brown sugar
- 1 cup MIRACLE WHIP or MIRACLE WHIP Light Dressing
- 2 eggs
- 1/3 cup buttermilk
- 3 cups flour
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 3 tart apples, peeled, chopped (about 3 cups)
- 1 cup raisins
- 1/2 cup chopped PLANTERS Nuts
- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 1/4 cup (1 stick) butter or margarine, softened
- 1 tsp. vanilla
- 1 pkg. (16 oz.) powdered sugar, sifted
- Cake: BEAT brown sugar, dressing, eggs and buttermilk in large bowl with electric mixer on medium speed until light and fluffy.
- Add combined dry ingredients.
- Stir in apples, raisins and nuts.
- Pour into greased and floured 13x9-inch baking pan.
- Bake at 350F for 45 to 50 minutes or until toothpick inserted in center comes out clean.
- Cool.
- Frosting: BEAT cream cheese, butter and vanilla with electric mixer on medium speed until well blended.
- Gradually add powdered sugar, beating well after each addition.
- Frost cake.
