Springtime Vegetable Coleslaw
- 1 lb shredded cabbage
- 1 cup grated carrot
- 12 cup broccoli floret, chopped
- 12 cup halved cherry tomatoes
- 12 cup sliced celery
- 12 cup peeled seeded diced cucumber
- 1 cup chopped fresh parsley
- 13 cup olive oil
- 2 tablespoons vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic salt
- Combine cabbage, carrots, broccoli, tomatoes, celery and cucumber in large salad bowl.
- Whisk together remaining ingredients for dressing.
- Pour over vegs; toss to coat well.
