Calamari in Tomato Sauce
- 1 onion (chopped)
- 1 bay leaf
- 2 garlic cloves (finely chopped)
- 3 tbsp olive oil
- 2 tsp optional- sugar (if you like it sweeter)
- 1 kg calamari rings or 5 whole squids
- 1 cup white wine
- 1/2 tin of chopped tomatoes (425g tin). Can add whole tin depending on your preference.
- 1 1/2 cup water
- 1/3 tsp seasoned or garlic salt
- 1/2 tsp Cayenne chilli pepper or 1 tsp of hot sauce.
- 1/4 tsp creole Spice Mix (optional)
- 1 handful of chopped parsley
- Prepare the squid if using whole, cut into circles.
- Heat the olive oil on a medium heat.
- Add the onion, garlic and bay leaf.
- Fry for about 3-4 minutes or until lightly browned.
- Add the chopped tomatos, salt and chilli pepper.
- Cover with lid and simmer for about 5-10 minutes.
- If using add sugar aswell as the creole.
- Lower the heat slightly and add the calamari rings.
- Let it simmer for around 15-20 minutes.
- Add the wine and cook for a further 35-40 minutes or so on a low to medium heat.
- Stirring regularly.
- Add water as and when it starts to dry.
- You may not need to use it all.
- Add the parsley about 5 minutes before heat is turned off.
- Check seasoning and rest for 5 minutes before serving.
