Hungarian Goulash
- 2 lb. stewing steak
- mutton, cut into 2-inch cubes
- 2 lg. onions, finely sliced
- 1 red pepper, chopped
- 2 green peppers, chopped
- 2 chilies, chopped *
- 1 lg. potato, peeled and grated
- 1 can tomatoes
- 2 tbsp. Hungarian paprika
- Salt
- Lard
- cooking oil
- Heat oil in saucepan and fry onions till soft.
- Add meat, peppers, chillies, salt and paprika.
- Fry until meat has browned.
- Grate the potato into frying mixture(this will make a nice, thick sauce).
- Add tomatoes and enough water to stew meat.
- Cover pan and simmer until meat is tender, adding water if it starts to go dry.
- Serve on a bed of rice or gnocchi (galuska) and put a spoonful of soured cream or yoghurt on top.
