Banana Bread (Nanny Mac's)
- 4 ripe bananas
- 1 beaten egg
- 1/2 cup melted butter
- 1 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 1/2 cup all purpose flour
- 1 vanilla pod
- 2/3 cup sugar
- 1/2 teaspoon kosher salt
- Preheat oven to 170C.
- Mash bananas in a large bowl.
- Over ripe (very brown) bananas work best.
- Add melted butter to bananas.
- Mix well.
- Add 2/3 cup of sugar and vanilla to egg and banana mixture, cream together.
- Mix in baking soda, cinnamon, salt and nutmeg.
- Using a spatula or wooden spoon fold in flour until fully mixed.
- Grease loaf tins.
- Divide mixture into two small loaf tins (18 x 9 x 6.5 cm)
- Place tins in oven and bake for 40 minutes.
- Test to make sure it's finished by poking a toothpick into the center of the loaf, if it comes out clean, it's finished!
