Quiche Italiano

  1. Do not prick unbaked pie shell.
  2. Bake at 400u0b0 for 5 to 7 minutes, weighted down.
  3. Cook pepperoni, pepper, onion and mushrooms in butter until tender.
  4. Stir in spices.
  5. In pastry shell, layer 1 cup Mozzarella, top with pepperoni mix.
  6. In a bowl, mix eggs and milk and beat with fork until mixed.
  7. Pour over pepperoni mix.
  8. Bake at 375u0b0 for 25 to 30 minutes or until knife inserted comes out clean.
  9. Top with tomato wedges, sprinkle with remaining Mozzarella.
  10. Bake 2 more minutes until cheese melts.
  11. Let stand 5 minutes.
