Southwestern Rice Salad
- 1 (7 ounce) box Spanish rice mix
- 0.5 (16 ounce) bag frozen corn
- 12 red bell pepper, diced
- 12 green bell pepper, diced
- 4 roma tomatoes, diced
- 12 small red onion, diced
- 14 cup cilantro, chopped
- 1 (15 ounce) can black beans
- Prepare rice mix as directed on package.
- Add frozen corn while rice simmers.
- Dice red bell pepper, green bell pepper, tomatoes, and onion.
- Chop cilantro.
- Rinse black beans in cold water.
- Combine all ingredients.
- Can be served warm or cold.
