Greek Quinoa Salad
- 2 cups Water
- 1 cup Uncooked Quinoa, Rinsed
- 1 whole Large Cucumber, Diced
- 1 pint Cherry Tomatoes, Sliced
- 1 bunch Green Onions, Chopped
- 1/2 cups Olives, Chopped
- 1/2 cups Greek Salad Dressing
- 1 package Crumbled Feta Cheese (6 Ounce Package)
- In a medium saucepan bring the water to a boil.
- Add the quinoa, place lid on pan and reduce heat to low.
- Let it simmer for 10-12 minutes or until all the liquid is absorbed.
- Meanwhile, chop your cucumber, tomatoes, green onions, and olives if you havent already.
- When quinoa is ready pour it into a large serving bowl, pour in salad dressing, add vegetables and feta cheese.
- Stir lightly and serve.
- This can be eaten immediately while still warm.
- However, if you prefer it cold, just rinse the cooked quinoa with cold water before you combine it with the rest of your ingredients.
