Triple-Strawberry Parfaits with Vanilla Wafers
- 6 Tbsp. JELL-O Brand Assorted Red Sugar Free Gelatin, Strawberry Flavor
- 3 cups hot water (140F to 160F)
- 3 cups fresh or frozen strawberries, pureed
- 1-1/2 qt. strawberry low-fat yogurt
- 1-1/2 tsp. almond extract
- 1 qt. sugar-free whipped topping, divided
- 3 cups fresh strawberries, sliced
- 1-1/2 cups vanilla wafers, chopped
- 24 each whole fresh strawberries
- Dissolve gelatin mix in hot water as directed on package.
- Add pureed strawberries, yogurt and almond extract; stir with whisk until well blended.
- Refrigerate 1 hour or until thickened but not set, stirring occasionally.
- Fold in 1-1/2 qt.
- of the whipped topping (or 1 cup of the whipped topping for trial recipe).
- Spoon 3/4 cup gelatin mixture into each of 24 parfait glasses (or into each of 4 parfait glasses for trial recipe).
- Refrigerate 2 hours or until firm.
- Top each parfait with 2 Tbsp.
- sliced strawberries, 1 Tbsp.
- chopped wafers, 1 Tbsp.
- of the remaining whipped topping and a whole strawberry.
