Dad's Chili Recipe
- 1 pound grnd beef, lean
- 1 pound pork sausage
- 1 lg. onion, diced
- 1 lg. green pepper, diced
- 1 pound cooked pinto beans
- 1 lg. can crushed tomatoes
- 1 sm. can stewed tomatoes
- 1 bottle beer (optional)
- 4-8 tbsp. chili pwdr
- Minced garlic, to taste
- 1 teaspoon oregano
- Red pepper, to taste
- Salt and black pepper, to taste
- In a skillet, brown grnd beef and sausage.
- Drain the fat and add in diced onion.
- Cook in a large pot till the onion is soft.
- Add in diced green pepper and cooked pinto beans, with some of the cooking liquid.
- I soak the beans overnight and cook them in liquid to cover, plus an onion stuck with four cloves.
- (Remove the onion when cooked.)
- Add in crushed tomatoes, stewed tomatoes and the bottle of beer.
- Mix with remaining ingredients; simmer 3+ hrs, stirring occasionally.
