Chile Cheese Meatloaf Recipe
- 1 can (8 ounce.) tomato sauce
- 1/2 c. catsup
- 1 pound grnd lean beef
- 2 Large eggs
- 1 c. fresh bread crumbs
- 1 can (7 ounce.) Ortega whole green chilies
- 1 pkg. (8 ounce.) Jack cheese
- In a small bowl mix together tomato sauce and catsup.
- In a large bowl combine beef, Large eggs, crumbs and 1/2 c. tomato mix.
- Stuff 4 whole green chiles with 1/2 of the cheese cut into strips.
- Grate remaining cheese and cut remaining chiles into strips.
- In a well greased 5 x 10 x 3 inch loaf pan, pour 1/2 tomato mix to cover bottom.
- Spread 1/2 meat mix over this.
- Lay 4 stuffed chiles in pairs on meat mix.
- Cover with remaining meat.
- Pour remaining tomato sauce over top and garnish with grated cheese and chile strips.
- Bake in preheated oven (350 degrees) for 1 hour.
- Remove from oven and allow to set 5 min before serving.
- Serves 4-6.
