Black Bean Soup (Cook's Choice) Recipe
- 2 piece bacon,, minced
- 1 x Yellow onion,, minced
- 2 x Garlic cloves,, chopped
- 2 x Celery stalks,, diced
- 2 x Carrots,, diced
- 12 ounce Uncooked black beans
- 3 quart Water
- 1 Tbsp. Cumin
- 2 tsp Oregano
- 2 x Bay leaves
- 1 tsp Salt
- 1/2 tsp Black pepper
- 2 Tbsp. Sherry wine
- 3 Tbsp. Cilantro
- Show bacon sauteing in large stock pot.
- Add in onion, garlic, celery and carrots.
- Add in water, beans, cumin, oregano and bay leaves.
- Bring to a boil.
- Let simmer for 1 1/2 hrs.
- Stir in salt, pepper, sherry and cilantro.
- Remove from heat.
- Process with blender for 10 to 15 seconds.
