Huevos Rancheros

  1. In 10-inch skillet, mix black beans, salsa, and 1/4 cup water.
  2. Heat to boiling over high heat, stirring frequently.
  3. Break eggs, one at a time, into a custard cup and slip onto top of bean mixture.
  4. Reduce heat to med-low; cover.
  5. Simmer until white are completely set, and yolks begin to thicken, about 5 minutes.
  6. To serve, sprinkle bean mixture and eggs with cheese.
