Taco Cupcakes
- 1 pound Ground Beef
- 1 can (16 Oz. Size) Black Beans
- 1 envelope (1 Oz. Size) Taco Seasoning
- 3/4 cups Water
- 48 whole Wonton Wrappers
- 1 jar (16 Oz. Size) Queso
- 2 cups Cheddar Cheese, Shredded
- 1 jar (16 Oz. Size) Salsa
- Preheat oven to 400 degrees F.
- Cook beef in a skillet over medium heat until brown, then drain fat.
- Add black beans straight from the can (liquid and all) and the taco seasoning to beef and simmer with the water.
- While beef is cooking, spray two 12 cup cupcake trays with cooking spray and then line each cup with a wonton wrapper.
- Add 1 heaping tablespoon each of queso, beef mixture and salsa into the cups.
- Top with some cheese and another wonton wrapper.
- Tuck in the wrapper and make sure both wrappers are connected.
- Repeat with more queso, beef and salsa.
- Top with remaining cheese.
- Bake for 20 minutes then remove from oven.
- Let them sit for 510 minutes after removing them from the oven, to set the cupcakes.
- Remove them from the pan and eat.
