Vegetable and Cheese Frittata
- 3 spring onions, chopped
- 1 cup grated zucchini, squeezed to remove water
- 1 cup grated carrot, squeezed to remove water
- 4 eggs, lightly beaten
- 1 cup grated KRAFT* Cheddar Cheese
- 1/4 cup plain flour
- 1/3 cup polyunsaturated oil
- Heat a little oil in a frying pan and cook spring onion and grated vegetables for 3 - 4 minutes or until spring onion is soft and moisture has evaporated.
- Combine grated vegetable mixture with eggs, cheese, flour and oil.
- Pour into a lightly greased round pie plate or shallow casserole dish.
- Bake at 200C for 35 - 40 minutes or until set on top.
- Allow to stand for 5 minutes before slicing into wedges.
- Enjoy hot or cold.
