Vegetable and Cheese Frittata

  1. Heat a little oil in a frying pan and cook spring onion and grated vegetables for 3 - 4 minutes or until spring onion is soft and moisture has evaporated.
  2. Combine grated vegetable mixture with eggs, cheese, flour and oil.
  3. Pour into a lightly greased round pie plate or shallow casserole dish.
  4. Bake at 200C for 35 - 40 minutes or until set on top.
  5. Allow to stand for 5 minutes before slicing into wedges.
  6. Enjoy hot or cold.
