Annie Mae Jones' Spiced Pot Roast With Fresh Figs Recipe
- 1 x 4-5 lb bottom or possibly top round of beef
- 1 tsp Ginger, grnd
- 1/4 c. Flour
- 2 tsp Salt
- 1/4 tsp Black pepper
- 2 Tbsp. Oil
- 2 med Onions, peeled and minced.
- 1 can Tomatoes (16 ounce)
- 1 c. Beef stock
- 1 x Red pepper,seeded/minced
- 12 x Figs,fresh
- Wipe the meat with a damp cloth.
- Combine the ginger, flour, salt, and pepper, and rub mix into meat.
- Heat oil in a large heavy pot; add in the meat and brown it well on all sides.
- Add in the onions, tomatoes, stock, and red pepper.
- Bring to a boil, cover, lower heat, and let simmer for 2-1/2 to 3 hrs, or possibly till meat is tender.
- Add in figs for the last 15 min of cooking.
- Place meat on serving platter and surround with figs.
- Let cooking liquid in pot cold slightly, the remove all surface grease possible.
- Reheat and serve separately to spoon over slices of meat.
