Creme de Brocoli (Cream of Broccoli Soup)

  1. In a large saucepan, melt the butter and add the flour.
  2. Stir constantly, and cook for about 1 minute.
  3. Pour in the milk and chicken broth, stir well and bring to a boil.
  4. Add the chopped onion and half of the broccoli.
  5. Bring to a boil, the reduce the heat to medium-low or low to maintain a gentle simmer.
  6. Simmer until the broccoli is cooked 9 to 11 minutes.
  7. Puree with a blender.
  8. Add the remaining half of broccoli into the soup and cook until the pieces are cooked but still slightly crisp, about 6 minutes.
  9. Season to taste with salt and black pepper.
