Steak and Cheese Quesadilla
- 1/4 lb grilled steak, slice thinly against the grain
- 1/4 cup shredded cheese any
- 1 flour tortilla shell
- 1 tbsp sour cream
- 1 tbsp salsa or picante sauce
- Season and grill steak to desired doneness.
- Remove from the grill and let cool (the tex-mex rub recipe in my profile works really well with this).
- Mix the sauce ingredients and apply to 1/2 of the tortilla shells.
- Add the steak slices and then the shredded cheese.
- Grill over medium heat until the cheese is melted.
- Slice and serve.
