Sweet Potato Pudding
- 4 medium sweet potatoes
- 12 cup light cream
- 4 tablespoons sugar
- 2 12 cups coconut, shredded
- 2 tablespoons light butter, melted
- Peel and cook the sweet potatoes until fork tender.
- Combine 2 C coconut and cream in a saucepan, bring to a boil, remove from heat.Soak for 30 min, Press all liquid from coconut, discard pulp.
- Mash sweet potatoes.
- In the mixer, combine cream and sugar and beat until well mixed.
- Add sweet potatoes and mix until all lumps are gone and the consistency is light and fluffy.
- Fold in soaked coconut, blend well.
- Pour sweet potatoes in a greased 9x9 casserole.
- Bake at 400*for 15 minutes.
- Saute remaing coconut and sprinkle over top.
