Contemporary Waldorf Salad
- 3 medium crisp apples, cored and diced
- 1 1/2 Tbs. fresh lemon juice
- 2 large stalks celery, diced
- 1/2 cup raisins
- 13 cup soy mayonnaise
- 1/4 cup finely chopped walnuts
- 1 pinch ground nutmeg
- 2 cups mixed baby greens for serving
- In medium bowl, toss together apples and lemon juice.
- Add remaining ingredients except greens and toss until well mixed.
- Line 4 salad plates or shallow bowls with greens.
- Divide salad among plates and serve.
