Cheesy Carrots
- 1/2 lb. (8 oz.) VELVEETA, cut up
- 1/2 cup (1 stick) plus 2 Tbsp. butter, divided
- 1 to 2 lb. carrots, sliced, cooked until tender or 2 cans (14-1/2 oz. each) sliced carrots, drained
- 1/2 cup crushed crackers
- Melt VELVEETA and 1 stick of the butter in 1-1/2 to 2-quart casserole dish.
- Stir in carrots.
- Melt remaining 2 Tbsp.
- butter.
- Add cracker crumbs to melted butter and sprinkle on carrots.
- Bake at 350F for 20 to 30 minutes.
- Makes 4 to 6 servings.
- Note: Even kids who won't eat carrots love this dish!
