Mamas Tasty Baked Beans and Sausage Soup
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 large carrots, peeled and diced
- Four 16-ounce cans baked beans
- 1 pound cooked bratwurst, cut into 1/4-inch-thick rounds
- 1 cup beef or chicken broth
- 1/4 teaspoon salt
- 1/4 cup sliced scallions (white and light green parts), for garnish
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and cook for 3 to 5 minutes, or until softened.
- Combine the onion, carrots, beans, bratwurst, beef broth, and salt in the crockpot.
- Cover and cook on high for 4 hours or low for 8 hours, or until the carrots are tender.
- Garnish with the scallions and serve hot.
