Blackberry Streusel Cake Recipe
- 1 1/2 c. Flour, plus 2 Tbsp.
- 1/3 c. Sugar
- 1 tsp Baking soda
- 1/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/2 c. Applesauce
- 1 1/2 c. Blackberries
- 3 Tbsp. Brown sugar
- 2 Tbsp. Multi-grain oatmeal
- 2 1/2 tsp Frzn apple juice concentrate, thawed
- Preheat oven to 350 F. Lightly spray 8-inch baking pan with nonfat cooking spray.
- Combine 1 1/2 c. flour, sugar, baking soda, cinnamon and nutmeg and mix well.
- Add in applesauce and Blackberries to flour mix and mix till dry ingredients are moistened.
- Spread batter into prepared pan.
- In a small bowl, combine brown sugar, oatmeal and 2 Tbsp.
- flour.
- Stir in juice concentrate and blend till mix is crumbly.
- Sprinkle crumb topping over batter and bake in preheated oven for 25 min, till knife inserted in center comes out clean.
- Cold for 15 min before cutting.
