Chipotle Chili Pepper Shrimp with a Limy Dipping Sauce

  1. Preheat oven to 400 degrees F.
  2. Pat shrimp dry with paper towels.
  3. Place on a large baking sheet and rub with oil.
  4. Combine chipotle chili powder, salt, and black pepper in a small bowl.
  5. Season both sides of shrimp.
  6. Spread shrimp in a single layer on baking sheet.
  7. Bake in oven for about 6 minutes or until shrimp is pink and opaque throughout.
  8. While shrimp bakes, make the dipping sauce.
  9. Place mayonnaise, sour cream, agave, lime juice, lime zest, and salt in a bowl.
  10. Whisk until smooth and creamy.
  11. Serve with shrimp.
