Garden Vegetable Lasagna
- 4 cups fresh vegetables (chopped broccoli, sliced zucchini, sliced mushrooms) Target 2 lb For $3.00 thru 02/06
- 1 egg, beaten
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
- 3/4 cup KRAFT Grated Parmesan Cheese, divided
- 2 cups KRAFT Shredded Mozzarella Cheese, divided
- 1 jar (24 oz.) CLASSICO FAMILY FAVORITES Traditional Pasta Sauce
- 6 lasagna noodles, cooked
- Heat oven to 350F.
- Cook vegetables in skillet sprayed with cooking spray on medium-high heat 5 min.
- or until crisp-tender, stirring occasionally.
- Mix egg, cottage cheese and 1/2 cup Parmesan.
- Spread 3/4 cup spaghetti sauce in bottom of 12x8-inch baking dish.
- Top with 3 lasagna noodles, 1/2 of the cottage cheese mixture, 1/2 of the vegetables, 1 cup spaghetti sauce and 1 cup mozzarella; repeat layers.
- Sprinkle with remaining Parmesan.
- Bake 45 min or until heated through.
- Let stand 10 min before serving.
